I know I am one day late. It was yesterday that Zorra had asked us to participate in the St Patrick celebration and post a green or Irish recipe. We did celebrate! Oh I wish I had been there yesterday evening, somewhere in the middle of Ireland, in a pub, listening to some good music, drinking a pint of Guinness, or two, falling asleep to the sound of the conversation in Gaëlic. But Ireland is far away. So I cooked an Irish stew, so filling, so satisfying, played some Irish music, drank a few glasses to the health of St Patrick and the Irish people, and forgot to write about it.
So here is my participation to St Patrick day's celebration, Irish cream chocolate truffles, coated with green colored chocolate to celebrate Ireland. Not really good looking but they turned out nice, creamy, and really tasty.

200g dark chocolate
150 ml double cream
3 tbsp Irish cream liqueur
115g icing sugar
200g good quality white chocolate
1-2 tbsp cream
Melt the dark chocolate in a double boiler. Leave to cool. Whisk together the cream and the Irish cream to a thick consistency. Pour in the chocolate and mix well, then mix in the icing sugar. Leave to cool in the fridge for at least one hour.
Melt the white chocolate in a double boiler. Add some cream if the mixture is not smooth enough. Add a few drop of green food colouring. Using a teaspoon, make small balls of the truffle mixture and dip them into the green chocolate. Place the truffles to cool on a wire rack above a tray lined with greaseproof paper, then leave overnight in the fridge before eating all of them.

Et pour mes amis non-anglophones:
200g de chocolat noir bien corsé
150 ml de crème fraiche
3 cs de liqueur Irish cream (type Bailey’s)
115g de sucre glace
200g de chocolat blanc de couverture
1-2 cs de crème fraiche
Faire fondre le chocolat noir au bain-marie. Laisser refroidir.
